THE CANDIDA DIET: THE STRUGGLE IS REAL

It has been 30 days since I began my journey to better gut health. Ironically, it was day 30 when I decided to go back to my old habits and ways last time I attempted this diet. Right now, I feel really good. I remember feeling this great last time; thinking I had beat Candida and 28 days was enough. NOPE I know this time around that I’m going to stay hardcore for a while to nip this baby in the butt. 

So, quick little update…what has changed in 30 days? I am still in stage 1, and there have been many benefits; physically and mentally. Physically, my skin has cleared up, I have been having deep and blissful sleeps, I have more energy and get up earlier, and I feel lighter with less of a bloat around my tummy. Oh, and I have lost five pounds! I haven’t craved sugar or sweets late at night, and I haven’t had the need to get a triple expresso to get me through the day.  Mentally my brain is less foggy and I legit feel happier.  Can we say …WORTH IT!

That first week of detoxing is hell, but completely worth all of the benefits I am experiencing now! I am hopeful that it is going to just keep getting better, and that I will actually start to crave healthy foods- actually, I am already seeing this. Last night I wanted nothing more than to eat a huge salad and in turn, started salivating! I am looking forward to adding a few berries, beets, yams and brown rice back into my diet when the time allows. As for now, I am still limited in what I can eat, however,  I thought I would share some of my favourite go to recipes that have been saving my ass when I have (the far less occasional) sweet tooth hit me. I’ll be sharing my Cinnamon Cookies, Lard Bar and Coconut Pancakes! Yay for desserts!

Cinnamon Cookies

  • 3 tablespoons of coconut oil, soft
  • 1 1/2 tablespoons of almond butter
  • 1 packet of stevia
  • 1-2 eggs depending the size
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon Himalayan salt
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 3 tablespoons of coconut flour

Preheat oven to 350 degrees- mix all the wet ingredients together and add the cinnamon and flour in. Mix until combined.  Scoop into little cookies and bake for 7-10 mins! Super Healthy and hits the spot when you cant have sugar!

 

Coconut Pancakes

  • 1/4 cup of coconut flour
  • 1/8 teaspoon of baking soda
  • 1/3 cup coconut or almond milk
  • Pinch of salt
  • 2 tablespoon of coconut oil
  • 3 eggs
  • 1-2 teaspoons of honey (I couldn’t use honey because of sugar content- I substituted a tiny bit of stevia)
  • 1/2 teaspoon of vanilla extract

Mix all together, and pour on pan. Pretty self explanatory..hehe! And Delish!

Lard Bar

  • 1 cup of coconut oil
  • 1 cup of nut butter (I used almond)
  • 1/3 cup of unsweetened protein powder
  • 1/3 cup of shredded unsweetened coconut
  • 1/3 cacao pieces or carbo chips (I used both)
  • 1/3 nuts (I used chopped pecans and slivered almonds)

Melt the coconut oil, mix all the ingredients together. Pour onto a cookie tray or large plastic lid and put in freezer. Enjoy about 15 minutes later! Just make sure you store them in a cold place as the butters and oil will melt after a while.

 

Some of these might seem a little bland to you if you are eating a diet high in refined sugar. If it wasn’t obvious already, I invite you to switch up the conventional ice cream and pie for some of these recipes. Full of HEALTHY fats, vitamins and minerals, these recipes will not only leave you feeling satisfied, but feeling good about your choice. Going into month two of this long journey, I am just really excited and looking forward to being able to have small amounts of sugar soon (aka fruit), because when that happens.. you know I am making NICE CREAM 🙂 NO DAIRY ICE CREAM WOOP WOOP!
